The best meal in Victoria Falls is not at a lodge. It is on a plastic stool in a courtyard, cooked by someone who has been making it for forty years.

Sadza is the staple of Zimbabwe, a thick maize porridge eaten by hand with a relish of greens, beans or slow-cooked meat. Made well, it is an education in patience.
Our home-hosted lunches are arranged directly with families in the community. The money goes to the household that cooks, not to an intermediary, and the conversation — about school, weather, football, the river — is the real course.
Come hungry, take off your shoes at the door if invited to, and accept the second helping. It is the only compliment that translates in every language.
